Tupelo Honey

Tupelo honey is a unique and highly prized variety of honey produced primarily from the nectar of tupelo trees (Nyssa spp.), particularly the white tupelo (Nyssa ogeche) and water tupelo (Nyssa aquatica). Tupelo honey is predominantly harvested in the southeastern United States, especially in regions with tupelo tree habitats such as the Florida Panhandle and parts of Georgia and Alabama. The tupelo trees bloom for a short period in the spring, during which bees collect the nectar to produce this sought-after honey.

Beekeepers transport the hives on barges or floats to reach the trees in the river swamps during the tupelo bloom. Tupelo honey has such a high ratio of fructose to glucose that it does not crystallize.

Tupelo honey is renowned for its unique qualities, including a light golden to amber color, a smooth texture, and a mild, floral flavor. It is notably different from other types of honey due to its high fructose content, which gives it a delightful sweetness without an overly strong taste.

Overall, tupelo honey is a rare and exquisite honey variety cherished for its delicate flavor, unique characteristics, and culinary versatility. Whether drizzled over biscuits, incorporated into recipes, or enjoyed on its own, tupelo honey offers a taste of the southern U.S. and the natural beauty of tupelo tree blossoms.
